What type of chorizo is best to use for this pizza?

In this recipe, we use dry chorizo that slices up like salami or pepperoni. It is generally spicy, garlicky, and dark red. You can find it at most grocery stores or butcher shops.

Homemade Pizza Dough vs. Prebaked Pizza Dough

Homemade Pizza Dough

  • Advantages:
    • Customizable: You can adjust the dough according to your preference for thickness, flavor, and texture.
    • Freshness: Freshly made dough offers a unique taste and aroma that are hard to replicate with store-bought varieties.
  • Considerations:
    • Time-Consuming: Making dough from scratch requires additional time for kneading and allowing the dough to rise. *If you make a batch of homemade pizza dough you will have leftover bases for freezing.

How to Use: If you opt for homemade dough, ensure you allot extra time for preparation. Follow the steps in your chosen dough recipe, then proceed to the steps in the Chorizo Pizza recipe starting from rolling out the dough.

The Best Homemade Chorizo Pizza (3)

Prebaked Pizza Dough

  • Advantages:
    • Convenience: Prebaked dough is ready to use, saving time and effort.
    • Consistent Results: Since the dough is already partially baked, you're more likely to get a consistent texture each time.
  • Considerations:
    • Less Customizable: You're limited to the thickness and flavor profile of the prebaked dough available in stores.
    • Shelf Life: These can sometimes include preservatives, and it's important to use them before the expiration date for best quality.

How to Use: If you're using pre-baked pizza dough, you can usually skip the pre-baking stage. Just add your sauce and toppings to the prebaked crust and adjust the cooking time as needed (usually it’s less). Read the package instructions for any specific baking requirements.

📖 Substitutions & Variations

  • Use whole wheat or gluten-free dough for a healthier option.
  • Swap chorizo with spicy Italian sausage or pepperoni.

Additional Toppings to Try

  • Sliced black olives
  • Diced jalapeños

❓FAQ

What If I Don't Like Spicy Foods?

Opt for a milder sausage or use less chorizo.

Do I need to cook chorizo before putting it on the pizza?

In this recipe, we use dry or cured chorizo, which does not require cooking beforehand. However, if you are using fresh chorizo, such as on pizza de chorizo Mexicano, it needs to be cooked first.

Can I use a different type of cheese?

Sure, you can! The recipe calls for a specific type of cheese, but feel free to swap it out for whatever you have on hand or prefer. Just keep in mind that the flavor might change a bit.

What if I don't have chorizo?

No worries! You can replace chorizo with another type of spicy sausage, or even use a milder sausage and add some spices to it. The idea is to keep the spicy and savory elements that chorizo brings to the pizza.

Author: Deborah Rainford

Ingredients

  • 1 pound pizza dough, store-bought or homemade
  • 1 cup tomato sauce, store-bought or homemade
  • 1 to 1.5 cups shredded mozzarella cheese
  • 10-20 slices of chorizo sausage, use mild or spicy
  • Olive oil, for brushing
  • 1 teaspoon dried oregano, optional
  • ½ teaspoon garlic powder, optional
  • Fresh basil leaves or parsley, for garnish, optional

Instructions

  • Preheat the Oven: Preheat your oven to 475°F (245°C). If you're using a pizza stone, place it in the oven during preheating.

  • Roll Out the Dough: On a floured surface, roll out the pizza dough to your desired thickness. If you have a pizza peel, transfer the rolled-out dough onto it. Otherwise, place it on a parchment paper-lined or lightly greased baking sheet.

Top the Dough:

  • Spread the tomato sauce evenly over the dough, leaving a small border for the crust.

  • Evenly sprinkle the shredded mozzarella cheese over the sauce.

  • Distribute the chorizo slices over the cheese.

  • Season and Oil: Lightly brush the crust with olive oil. Sprinkle the dried oregano and garlic powder over the entire pizza for added flavor (optional).

Bake:

  • If using a pizza stone: Slide the pizza onto the stone in the oven. Bake for about 10-12 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.

  • If using a baking sheet: Place the sheet in the oven. Bake for 12-15 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.

  • Serve: Remove the pizza from the oven and let it cool slightly. Garnish with fresh basil leaves or parsley if desired. Slice into 8 pieces using a pizza cutter or sharp knife. Serve immediately.

Notes

  1. Pizza Dough: If you're using store-bought pizza dough, ensure it's at room temperature before rolling it out. This will make it easier to handle and shape.
  2. Tomato Sauce: Using a thick sauce will prevent the pizza from becoming soggy. If your sauce is too thin, consider simmering it on the stove for a bit to reduce and thicken.
  3. Chorizo: Ensure you're using cured or pre-cooked chorizo slices. Fresh chorizo will release a lot of grease and may not cook thoroughly during the pizza's baking time.
  4. Cheese: Feel free to adjust the amount of cheese based on your preference. You can also mix in other cheeses like cheddar or provolone for a different flavor profile.
